Sushi Artistry: Meet Outlaw's Sushi Chef, TJ Hood
Gratitude is the foundation of my journey, and to my teacher, Masa-san, I owe a debt of thanks that words can barely express. Every day for three years, I closely watched and learned from his hand movements as he prepared fish, garnishes, and sauces. I recorded my own actions on camera while making sushi to refine my skills, focusing on efficiency. Speed became a crucial aspect, prompting friendly competitions with Masa as we timed ourselves while plating dishes to always aim for improvement. His investment of time and wisdom has cultivated the skills that now bring a long-held dream to the brink of reality. More than a mentor, Masa-san is a cherished friend. Those moments behind the sushi bar, crafting culinary wonders, are etched as some of my most treasured memories. The ambition now is to build something here that resonates with the essence of those shared experiences, something that would make Masa-san proud.
As for me, my roots dig deep into the soil of the Shoals, and my ambitions soared after graduating from Coffee High School and the University of North Alabama two decades ago. The call to explore the world resonated strongly within me. My journey began in Fort Collins, Colorado, where I tended bar and managed various restaurants. The vibrant food scene, the warmth of the people, the pulsating nightlife, and the constant presence of live music made me feel instantly at home.
A pivotal turn led me to a bustling sushi restaurant downtown, where I found my true calling behind the sushi bar. The atmosphere, the precision, and the artistry felt like second nature. Now, as I embark on this new chapter, my goal is to create something extraordinary—a culinary haven that reflects the passion, dedication, and camaraderie that defines my journey. Let's build something incredible together.
